Andre Clouet Rose Champagne: $79

A huge basket of freshly squeezed strawberries! The wine is masked by a lot of bubbles, and it quickly sizzles and melts in your mouth. The trick here is not to drink it while it’s still chilled, let it warm up in the glass (don’t use flutes!), and enjoy the intensity of the champagne, very enjoyable.

Andre Clouet Champagne 1911 MV: $129

One of the best Champagnes that can beat out popular names such as Dom Perignon, Cristal, Krug, etc!

Started off a mixed character on the nose; aged tobacco leaves but also young with sour green apple. Palate was similar; initially the green apple dominated. However I discovered that the champagne slowly evolved into ripe apple and honey, very bold and rich. Unforgettable!

Suggested Food Pairing: Fried Eggplant; Oysters

Verget Vaudesir Chablis Grand Cru: $109

Exceptional White Burgundy at a low price!

This wine was lemony both on the nose and body. Rich and bold with substantial weight. Normally the body of a Grand Cru has more weight, bolder in style, richer on the palate, and the choice of oak quality being used. Grand Cru used more refined oaks to age their wines.

Suggested Food Pairing: Deep Fried Cod; Scallops; Lobster

2005 Bouchard Pere et Fils Greves 1er Cru Vigne De L’Enfant Jesus: $230

Monopole Red Burgundy with great structure and finesse!

The nose had dark cherry, raspberry and nail varnish. It started closed but when it opened up, I noted the signature character of 2005 red burgundies. Structured, substantial softness on the palate and depth, can age for 20-30 yrs no problem!
