How difficult was it to throw away grapes that looked unhealthy and make wines based upon healthy grapes? That’s exactly what Bize Lalou Leroy did to Auxey Duresses, she’s encouraging winemakers to follow her style of wastage just to obtain great intensity for her wine. It was obvious from the content of the wine, concentrated, rich although not extravagant, load full of honey, the content turned very buttery much later, and stayed throughout the night unchanged.
