Vinification:
80% fermented in stainless steel
20% fermented in old French oak barrels
(not new, to avoid excessive oak character)
This is Chablis with character and Bok’s absolute favourite of the range! The 2022 Jean Dauvissat Chablis Heritage opens with a captivating nose of ripe orchard fruit and creamy citrus, laced with a delicate buttery note from the malolactic conversion.
Made from 70+ year old vines, the palate is round, smooth, and approachable, revealing generous yellow fruit flavours balanced with finesse.
While the acidity is softer than typical for Chablis, the wine remains utterly charming and deliciously drinkable.
The oak integration is key here: it brings warmth, body, and texture without overpowering the fruit.
